Jack Adair Bevan


Jack Adair Bevan is an award-winning drinks and cocktail creator, writer, co-founder of The Ethicurean in Wrington and of their house Vermouth The Collector.

The Ethicurean at Barley Wood Walled Garden is a kitchen garden restaurant which uses produce grown and sourced locally – the majority of produce is grown within the walled garden, and is supplemented by daily foraging. Jack has created a myriad of house infusions, cocktails and soft drinks to accompany the amazing food on offer. The Ethicurean Cookbook was published by Ebury in 2013 and the following year won the Gourmand World Cookbook Award for most sustainable cookbook. It was also runner up in the Guild of Food Writers awards. Awards for the restaurant have come thick and fast – it won The Observer Food Monthly’s ‘Best Ethical Restaurant’ in 2011, and ‘Best Supporter of Local Produce’ in 2012, 2013 and 2014 in The Bristol Good Food Awards. In 2014 The Ethicurean was placed in the top 100 restaurants in the UK by The National Restaurant Awards and was hailed by Fiona Becket as ‘the UK’s answer to NOMA’. In 2015 Marina O’Loughlin named The Ethicurean as number 2 in her top 50 UK restaurants in The Guardian.

Jack writes a regular drinks column for The Guardian Weekend Magazine, and appears regularly in The Times, Independent and The Telegraph.  He is on the judging panel of the 2016 BBC Radio 4 Food and Farming Awards and the 2016 Imbibe Awards. In 2013 he was awarded ‘Young British Foodie of the Year’ in the cocktail category for his Old Fashioned, and in 2015 was named ‘Innovator of the Year’ in the Imbibe Awards. Jack appeared on BBC 2’s primetime show Food and Drink in 2015, making soft drinks with Oliver Peyton. Jack often contributes to The Food Programme on BBC Radio 4. He regularly appears at Food and Drink Festivals around the UK, and recently took part in The Borough Talks chaired by Xanthe Clay, discussing how London’s food scene shapes what we eat. The Collector is served in Quo Vadis, St John and throughout The Soho House Group to name a few, and is available to buy at Fortnum and Mason and Selfridges.
